Winter provided average rainfall levels which resulted in good soil moisture for vine budburst in early spring. The balance of the growing season provided a slightly below average temperature leading to a desirable long, slow ripening period. A dry summer and harvest resulted in slightly earlier picking for Cabernet resultant wine showing good colour with classic regional varietal flavours and more delicate body and tannins.
The premium parcels were fermented in a combination of static and rotary fermenters and underwent daily pumping over or rolling. Following primary fermentation, the wine was pressed off into tank & a selection of oak barrels for Malo-lactic fermentation and maturation. During this period, up to three racking’s occurred across the various parcels to assist in tannin integration and aromatic complexity.
