Fermented separately using a range of techniques; this creates an array of blending options and choices for the final wine. Between 12-15 months in a mix of French & American oak, impart softness and flavour.
Deep dark red appearance. Lashes of mulberry jam, a little light black pepper, and an light whack of American oak vanillin infiltration. Tannins are quite tight, and show that this small but brave little fella still has a while to go yet. Will sit down for 5-7 years no worries whatsoever.
Clare Valley is a wine region within the Lofty Ranges of the South Australia zone. Its history dates back to the 1840s when vines were first imported to the country for planting. Now this picturesque area is a prime tourist destination. Many of the vineyards are situated on higher levels of the Mount Lofty Ranges. Warm summer days and cool nights are ideal for maximum grape ripening. The Rieslings grown are therefore very complex, with good acidity and often cellar-worthy. Shiraz and Cabernet Sauvignon are also very well respected from the area.
BBQ and roast meats, pork ribs, hearty beef stews and casseroles, game meats & spicy poultry, pasta with tomato and spicy meat based sauces, Ratatouille, sausages, blue, cheddar and hard cheeses.
